Life is sweeter when you add a little sauce. :) That might mean adding a little extra to a recipe. It might mean adding a little extra to your life.
Here’s a recipe for treats surprisingly delicious, soft and sweet: Sheri Liles’ gift to us on this month’s Secret Adventure.
The secret… is in the sauce. :)
Sheri’s Applesauce Muffins
1 cup sugar
½ cup vegetable shortening
1 egg well beaten
2 cups applesauce (fresh is even better!)
1 ½ cups all purpose flour and ½ cup almond flour
2 teaspoons baking powder
1 teaspoon baking soda
½ teaspoon salt
1 teaspoon allspice
½ teaspoon each of cinnamon, ground cloves, and nutmeg (SUCH an aroma!)
1 cup chopped dried fruit (Sheri uses dried cranberries and dried prunes – which is better than it sounds!)
1 cup chopped nuts (She uses a blend of walnuts, almonds & pecans).
Cream sugar and shortening together until light and fluffy.
Beat in egg.
Add applesauce and mix well.
In a separate bowl, combine flour, baking powder, baking soda, salt and spices.
Gradually add dry ingredients to creamed mixture.
Process dried fruits in a food processor and add to the batter.
Spoon the batter into paper-lined muffin pans and bake at 360 for 20-25 minutes. Yield: 1 ½ dozen.
